Calcium chloride can be utilised in different applications within the enzyme industry, e.g., as a method to facilitate separation of the enzyme from other cell structures after fermentation. Some enzymes also require a calcium ion, Ca2+, as co-factor that will retain the three-dimensional structure of the protein. In some cases, a highly soluble source of calcium is required as a nutrient in fermentation processes. |
